I ask not for details on why, but what is your finish schedule?
I would like to try some different things.  I mainly use cherry and maple. Right now, my schedule is:

Watco Danish Oil, then
Spray Lacquer


I know another common one for maple is:
Anyline Dye, then
Oil, then
Shellac
